This coffee release is a result of our recent trip to our supplier wherein we cupped a selection of 50 different coffees. Our 2 Ethiopian releases stood out to us on the cupping table stacked to the max with very high quality specialty coffees from all over the coffee world.
The Koke Shalaye washing station covers 2.5 hectares and is equipped with 220 drying beds and 12 primary fermentation tanks, creating optimal conditions for processing high quality specialty coffee. The beans are sourced from a community of over 2040 farmers. The washing station is owned by Abreham Mengiste. It was established in 2019 and has gained recognition for its exceptional production, including an award from the AFCA TOH 2019 competition.
This coffee is slowly dried in thin layers on raised beds. Once harvested, the beans are completely de-pulped, soaked and fermented before being washed again and dried. As soon as the beans reach the optimal moisture content of around 12.5%, they are transported to a cool place for further processing (hulling, sorting and grading according to quality, and bagging in Grainpro bags for export).
In the cup, you can expect an expressive and complex cup with notes of melon, grapes, and florals.
This coffee is roasted VERY lightly and we recommend resting this coffee for 4 weeks before enjoying to enjoy maximum flavor clarity and consistency when brewing. Ultra light coffee enjoyers rejoice :D
