Process

Lactic Honey

Mt Apo Lactic Honey is one of the flavors we developed together with Lucia Solis and Tres Rosa’s Farm (more on our YouTube channel). This process dramatically reduces bitterness and enhances the perception of crisp and fruity flavors.

In the cup, Mt Apo Lactic Honey is vibrant and juicy. We taste peach, red apple, and dried raisin like sweetness. The aroma of this coffee is very inviting -- it has a strong and sweet molasses aroma with hints of florals lingering in the background.

This year marks the 5th year of collaboration with Tres Rosa’s farm. And this year, we are improving upon our sourcing practices for our Mt. Apo coffees from Tres Rosa’s farm. We have set new protocols in place and are committed to only sourcing coffees that score 83 points and up from Tres Rosa’s whilst purchasing more greens from them at the same time.

A huge section of our customer base loves Tres Rosa’s coffee. We also see that many of our customers purchase our Mt Apo selection as gifts to friends and families overseas to show them what our Philippine coffees taste like. As such, we deem it our responsibility to source only the very best this farm can offer and proudly showcase the quality that we are capable of producing.

Our aspiration for our Mt. Apo Tres Rosa’s selection is to showcase what the Philippine specialty coffee scene can offer in terms of green bean quality, roasting skill, and the overall quality improvements that can be done in the long-term that are only possible with a long-term collaboration with a producer. This is something quite unique in a coffee producing country wherein a deeper collaboration is possible between the producer and the roaster.

Good coffee

The coffee tastes good. The only problem is it's quite hard to grind it. 'Makunat' to be exact. Not crisp. Probably because it's light roast (was not mentioned on the website). Tried light roast beans from other coffee shops and they were not this difficult. I'm using a hand grinder. Some people might have a hard time grinding the beans. I hope there's an option to select roast level (Light or Medium at least). Also please indicate the roast level on your website.
