This coffee release is a result of our recent trip to our supplier wherein we cupped a selection of 50 different coffees. Our 2 Ethiopian releases stood out to us on the cupping table stacked to the max with very high quality specialty coffees from all over the coffee world.
Located in Oromia, about 400 Km south of Addis Ababa, the Nensebo is home to a collection of smallholder farmers totaling 5,000 hectares of coffee. The average farm size in Nensebo is two hectares and producers cultivate a range of heirloom coffee varieties, including wild varietals originating from the neighboring forests. Ripe coffee cherries are selectively harvested by hand, ensuring that only the red, ripe cherries are collected. The outer skin of the coffee cherry is removed using a pulping machine, which extracts the beans from the fruit.The beans, still covered in a layer of mucilage, are then fermented in water. This step can take anywhere from 12 to 48 hours, and it helps to break down the remaining fruit layer. After fermentation, the beans are washed thoroughly to remove any remaining mucilage. After the washing process, the beans are spread out in thin layers to dry under the sun until they reach the ideal moisture level of about 12%. After this, the coffee is taken to a local warehouse for thorough sorting and hulling, where the parchment layer is removedto reveal the green coffee beans. These beans are then prepared for the roasting process, while stringent quality control measures are upheld until the final export stage. The washed process is known for producing coffees with bright acidity and a clean, crisp flavor profile, as the method allows for the expression of the natural characteristics of the coffee beans.
In the cup, you can expect a floral and fruity cup with notes of jasmine, peach, and red berries.
This coffee is roasted VERY lightly and we recommend resting this coffee for 4 weeks before enjoying to enjoy maximum flavor clarity and consistency when brewing. Ultra light coffee enjoyers rejoice :D
