This coffee originates from one of the most respected and well-renowned coffee producers in Nicaragua, the Mierisch family. This bourbon varietal was processed as a super natural coffee. The beans underwent a controlled and extended fermentation process resulting in bright and fruity flavors in the cup.
In the cup, you can expect to taste flavor notes of orange soda, apple, and a winey finish.
This coffee was roasted light. You may notice that the beans themselves look darker than what you may expect from a light roast. This is normal as the beans are lower density and thus develop color rather quickly.
For brewing, we recommend resting this coffee for at least 3 weeks and following this recipe to start:
